Punta Cana Wildlife Refuge now open to Tourists

The “Wildlife Refuge Laguna Bavaro,”
in Punta Cana, on the country’s easternmost region, recently opened after an agreement was signed between the Ministry of the Environment and the “La Altagracia” Province Tourism Cluster. The
agreement allows for visitors to take guided tours of the wildlife refuge. The refuge is situated, in some cases,some 20 minutes by car from most of the region’s major hotels. Some hotels are close enough so that visitors can actually walk to the refuge. [Read more...]

St. Lucia Airports

St. Lucia is a very lush and tropical island in the Eastern Caribbean. England and France fought for nearly two hundred years over beautiful St. Lucia. This dazzling Caribbean wonderland is a fountain of natural treasures – the fiery passions of an ancient volcano, the richness of a national rainforest, and the soothing waters of the glistening bay and sea.

 The island of St. Lucia has two airports. The larger Hewanorra International Airport (UVF) is approximately 90 – 120 minutes drive from the capital Castries and Rodney Bay.  The smaller George F. Charles Airport (SLU) is approximately 15 minutes drive to the Rodney Bay area. Van transfer costs are reasonable and readily available. Car rentals are also available, however it is wonderful to recieve an island overview from the local transfer drivers.

All large jets arrive at the larger Hewanorra International Airport with American Eagle and LIAT arriving at the smaller airport in Castries.

Peter Island Resort, Villas and Spa is getting greener. This was a pleasant surprise on my visit last week to see two wind turbines spinning away and generating electricity for the resort. Andres the Villa Manager who was our tour guide shared that approximately 25% - 50% of the resort’s power needs are supplied by the wind turbines. One and Only Palmilla – Cake Recipe

The One & Only Palmilla’s chef shared this wonderful receipe for flourless chocolate cake which looks just delicious:

One&Only Recipe of the Month
As the exclusive pastry chef for One&Only Palmilla, Steve Lindsey is responsible for the production of all breads, pastries and desserts prepared daily for guests and wedding celebrations held at the resort.
This month, Chef Lindsey shares his favourite celebration recipe for Flourless Chocolate Cake.

Flourless Chocolate Cake
One&Only Palmilla, Los Cabos, Mexico

Ingredients

12 oz. Semi-Sweet Chocolate
8 oz. Butter (unsalted)
8 oz. Sugar
7 Whole Eggs
8 oz. Chocolate (coarsely chopped)
8 oz. Heavy cream

Melt the semi-sweet chocolate and butter together, if using a microwave and a plastic bowl heat for 30 seconds at a time removing and stirring until smooth.

Using a mixer, beat the eggs and sugar until triple in volume (ribbon stage).

Fold gently together with melted semi-sweet chocolate and butter mixture and spread out thinly over a paper lined baking tray. Bake at approximately 350°F or 176°C (depending on size of baking tray, usually 12 to 15 minutes).

Gently place cake on frozen sheet pans after baking and cut into sections.

In a separate pan heat together the coarsely chopped chocolate and cream and stir until smooth and shiny.

Allow this mix to cool slightly and then spread thinly like icing between layers of the flourless chocolate cake and stack. Allow this to set completely in the refrigerator before serving.
