As the exclusive pastry chef for One&Only Palmilla, Steve Lindsey is responsible for the production of all breads, pastries and desserts prepared daily for guests and wedding celebrations held at the resort.
This month, Chef Lindsey shares his favourite celebration recipe for Flourless Chocolate Cake.
Flourless Chocolate Cake
One&Only Palmilla, Los Cabos, Mexico
12 oz. Semi-Sweet Chocolate
8 oz. Butter (unsalted)
8 oz. Sugar
7 Whole Eggs
8 oz. Chocolate (coarsely chopped)
8 oz. Heavy cream
Melt the semi-sweet chocolate and butter together, if using a microwave and a plastic bowl heat for 30 seconds at a time removing and stirring until smooth.
Using a mixer, beat the eggs and sugar until triple in volume (ribbon stage).
Fold gently together with melted semi-sweet chocolate and butter mixture and spread out thinly over a paper lined baking tray. Bake at approximately 350°F or 176°C (depending on size of baking tray, usually 12 to 15 minutes).
Gently place cake on frozen sheet pans after baking and cut into sections.
In a separate pan heat together the coarsely chopped chocolate and cream and stir until smooth and shiny.
Allow this mix to cool slightly and then spread thinly like icing between layers of the flourless chocolate cake and stack. Allow this to set completely in the refrigerator before serving.
